my bf often comes round mine, and obviously we have to eat.
but im a veggie, and i dont want to give him fancy meals and stuff, any suggestions as i am really stuck?!

1 small eggplant, halved and sliced

Preheat your oven’s broiler. Brush eggplant slices with olive oil, and place them on a baking sheet or broiling pan. Place the pan about 6 inches from the heat source. Cook under the broiler for 10 minutes, or until tender and toasted.
Split the French rolls lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese and basil leaves.


Portobello Sandwiches

2 cloves garlic, minced
6 tablespoons olive oil
1/2 teaspoon dried thyme
2 tablespoons balsamic vinegar
salt and pepper to taste
4 large portobello mushroom caps
4 hamburger buns
1 tablespoon capers
1/4 cup mayonnaise
1 tablespoon capers, drained
1 large tomato, sliced
4 leaves lettuce

Turn on broiler, and adjust rack so it is as close to heat source as possible.
In a medium-size mixing bowl, mix together garlic, olive oil, thyme, vinegar, salt and pepper.
Put the mushroom caps, bottom side up, in a shallow baking pan. Brush the caps with 1/2 the dressing. Put the caps under the broiler, and cook for 5 minutes.
Turn the caps, and brush with the remaining dressing. Broil 4 minutes. Toast the buns lightly .
In a small bowl, mix capers and mayonnaise. Spread mayonnaise mixture on the buns, top with mushroom caps, tomato and lettuce.


Sloppy Sams

3 cups water
1 cup lentils, rinsed
salt to taste (optional)
1 cup chopped onion
3 tablespoons olive oil
2 cups chopped tomato
2 cloves garlic, minced
1/2 (6 ounce) can tomato paste
1/2 cup ketchup
1 teaspoon mustard powder
1 tablespoon chili powder
3 tablespoons molasses
1 dash Worcestershire sauce
salt and ground black pepper to taste
4 hamburger buns, split

Combine water and lentils in a saucepan; season to taste with salt if desired. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 30 minutes, stirring occasionally.
Meanwhile, cook onions with the olive oil in a large skillet over medium heat until the onions have softened and turned translucent, about 4 minutes. Add tomatoes and garlic, and cook for 5 minutes. Stir in tomato paste, ketchup, mustard powder, chili powder, molasses and Worcestershire sauce; simmer 5 to10 minutes until thickened.
Drain lentils and reserve cooking liquid. Stir lentils into sauce mixture, adding cooking liquid or water as needed to obtain the desired “sloppy joe” consistency. Serve on buns.

The bay tree is indigenous to Asia Minor, from where it spread to the Mediterranean and then to other countries with similar climates. Bay leaf refers to the aromatic leaf of the bay laurel (Laurus nobilis, Lauraceae). The bay leaf is oval, pointed and smooth, 2.5 – 8 cm (1 to 3 in) long. When fresh, the leaves are shiny and dark green on top with lighter undersides. When dried the bay leaf is a matte olive green. Fresh or dried are used in cooking for their distinctive flavor and fragrance. The leaves are often used to flavor soups, stews, braises and pâtés in Mediterranean cuisine. The fresh leaves are very mild and do not develop their full flavor until several weeks after picking and drying.

If eaten whole, are pungent and have a sharp, bitter taste. As with many spices and flavorings, the fragrance of the bay leaf is more noticeable than its taste. When dried, the fragrance is herbal, slightly floral, and somewhat similar to oregano and thyme. Myrcene, which is a component of many essential oils used in perfumery, can be extracted from the bay leaf. also contain the essential oil eugenol.

Bay leaf is also an antifungal and antibacterial, and has also been used to treat rheumatism, amenorrhea, and colic.


I brought some bay leaves back from Turkey when I was stationed there in the Air Force. I still have them, so obviously they are not going to be good for cooking. Turkish Bay Leaves are the best in the world. Though not as strong as the California variety, they have a natural depth of flavor that the California Bay Leaves can’t hope to match. Bay leaves grow wild on the hilly mountains of western Turkey in the area around Izmir (Smyrna). The wind there is perfect for growing bay leaves. Most of the year it comes out of the west across the Mediterranean and Aegean seas, picking up moisture and dropping it on the growing trees.

This probably isn’t in your area, but there’s a lovely tea house in Woodstock, Tea Leaves and Thyme that serves a nice lunch, and it’s a really pretty venue. If Marietta is an option, there’s a farm-to-table restaurant that Alton Brown has been known to go to: Chicken and The Egg. Pretty place, and a good lunch.
